- buying eggplants only in summer, during mass ripening, this will help to avoid fruits with a high content of nitrates and other by-products of intensive agricultural techniques for growing plants.

- Grind the carrots into strips, onions, leek and pepper in half rings, and chop the garlic and greens as finely as possible.
- Fry onion with coriander in vegetable oil until golden brown, and add to it sweet pepper, leek and garlic.
- Stew for 5 minutes, and then add greens, carrots, chopped straws, spices and dry dill to the fried onion and pepper.
- Remove the spiced vegetables from the heat and mix thoroughly.
