Selection and preparation of ingredients
For harvesting you need to use only beautiful, ripe and high-quality fruits. No need to take rotted or immature vegetables, so as not to spoil the taste of the dish. It is advisable to choose fruits of the same size if they are not sliced. Before cooking, the vegetables are washed well.
Important! Often the fruits are blanched, which allows you to make them softer and makes it easier to put them in jars.

Classic recipe with cabbage

Nutritional value per 100 g:
- Wash dishes, vegetables, and herbs well.
- Peppers to blanch for softness, put in a colander and press on top with a press to glass the liquid.
- Chop the leaves of cabbage in slices (about 5 × 5 cm).
- Peel and chop the carrots.
- Divide the garlic into cloves and peel.
- Pour garlic, dill and peppercorns into jars. Then lay the peppers with cabbage in layers. Lay the pieces of carrots on the edges of the jar.
- Prepare the brine by mixing water, vinegar and salt (stir until dissolved) and pour the vegetables.
- Banks are placed in the dark, covered with gauze and left to ferment for 10 days.
- At the end of the fermentation process, cover the cans with nylon covers and put in the basement or refrigerator.

Tarkin Pepper Salad
90 minutes
oil (olive or sunflower)
100 ml
bulb onions
4 things. (about 200 g)
sugar (brown is better)

Nutritional value per 100 g:
- Wash and sterilize cans. Wash the vegetables.
- Prepare the main ingredient: bake in the oven for about 15 minutes (so that the skin starts to bubble), pour cold water, gently remove the skin from the fruit, peel the seeds and stalks and crumble into small pieces (about 2 × 2 cm).
- Heat the oil in a thick-bottomed pan.
- Chop the onion and chop it in half rings. Place in a pan with oil (allow to translucent).
- Finely chop the chili and add to the onion, cook for about 2-3 minutes.
- Add prepared Tarkin pepper, salt, sugar and vinegar to the pan.
- Mix well and simmer for about 10 minutes.
- Arrange the salad in sterile jars and roll up. Turn containers over, wrap and leave to cool.
Features of storage of blanks
Pepper blanks, like other preservation, are stored in a cool, dry place (cellar, cool pantry or refrigerator). Non-cooked workpieces are best kept in the refrigerator. The shelf life will depend on the appearance.
