One of the world's largest mushroom farms is located in the Irish county of Monaghan. The partner of the BioRescue project has its own laboratories, where 40 scientists not only study the composition of compost, but also conduct extensive research on the mushrooms themselves. They believe that mushrooms can become the food of the future.
