In Western Ukrainian coffee houses it is difficult not to find such a dessert as Lviv cheesecake. Love for it is unconditional and quite justified, because even those who are skeptical of cottage cheese and dairy products are ready to see it on their plate as often as possible.

Cooking this dish does not take much time and energy, and perhaps the most difficult thing in this process is to wait for the dessert to brew in the refrigerator for several hours.
Indeed, during baking, absolutely fantastic aroma will spill over your house! It is difficult not to succumb to the temptation and not to eat the Lviv cheesecake immediately after cooking.
However, be patient and wait for the required time, then pour this dish with thick and viscous chocolate icing, brew fragrant coffee and devote long minutes to pure pleasure.
In addition, the Lviv cheesecake is an ideal dessert for the New Year's dinner. Indeed, the appearance and taste characteristics of this delicacy are fully consistent with the solemnity of the moment.

The perfect match for Lviv cheesecake - a cup of coffee
Ingredients that you will need to make Lviv syrniki:
- 400 g of fatty cottage cheese;
- 50 g of sugar;
- 60 g butter;
- 3 chicken eggs;
- 40 g of raisins;
- 20 g sour cream;
- 1.5 tbsp corn starch.
And for the manufacture of glaze, the following components are needed:
- 75 g of dark chocolate;
- 45 g butter.
First of all, it should be noted that you can use both fatty cottage cheese (about 18%) and light (slightly more than 5%) for the preparation of the Lviv cheesecake - the result will be excellent anyway.
Sugar, you can easily partially replace with powdered sugar and season it with natural vanilla.
As for sour cream, it will give the dessert juiciness and moisture. And in this case, it also does not matter what degree of fat content will be in this ingredient.

So, we get the butter, cottage cheese, eggs and sour cream from the refrigerator. Pour raisins with boiling water and steam for 15 minutes. By the way, you can pre-soak raisins for the night in a fragrant drink - orange or cranberry juice, fragrant rum, liquor, cognac, etc.
Just do not forget to drain the liquid just before cooking and thoroughly dry the raisins on a paper towel.
Preheat the oven to 180 degrees. We cover the baking dish (you don’t need to take a diameter too large if you want the cheesecake to be high) with baking paper and grease the bottom and sides of the form in parchment with butter.
It is best to knead the dough in a large container, where we pour the cottage cheese, 50 g of sugar and starch. We interrupt everything with a submersible blender until smooth. Optionally, add citrus zest and / or vanilla extract to the dough.
Next, in the curd mass, you need to add soft butter and mix with a special spatula or ordinary spoon. After that, you can add eggs to the dough.

After mixing the curd mass well, add sour cream and raisins to it and mix again. After that, shift the dough into a mold and bake for about an hour at 180 degrees Celsius.
Lviv cheesecake is considered ready when its edges “grabbed”, and the center became elastic and springy with gentle finger pressure. Note that the syrnik should cool in the oven.
And then you put it in the refrigerator for a few hours or at night to stabilize its taste and texture.
